Ingredients:
1/2 cup coconut aminos (or tamari)
2 tbsp Apple Cider Vinegar
1 tbsp arrowroot powder (to make a slurry)
2 tbsp coconut sugar (optional)
1 tbsp peeled and grated fresh ginger
1.5 lbs grass fed flank steak cut into thin strips against the grain (we use butcher box - often this cut is hard to find at the supermarket)
2 tbsp avocado oil
8 oz fresh snow peas - trimmed
1 bunch green onions - sliced
Pinch of red chili flakes
Rice - cooked then cooled (for resistant starch)
Directions:
In a bowl mix together coconut aminos, ACV, coconut sugar, arrowroot powder and ginger.
Pour 1/3 of this mixture over the sliced beef and set the rest to the side.
In a large skillet over medium high heat warm oil.
Add snow peas and cook quickly until they turn a bright green color. Set aside.
Add meat to the same hot skillet, reserve the liquid in the bowl, and allow to cook 2-3 minutes before stirring. You want it to get slightly crispy.
Add a handful of chopped green onion and give the beef a stir. If working in batches remove meat to a clean plate and repeat steps 4 & 5.
Once all the meat is cooked return meat, reserved liquid and snow peas back to the skillet and cook over high heat for another minute.
Add a pinch of red pepper and another handful of green onions.
Season with salt and pepper if necessary.
The sauce thickens as it sits - serve with rice and additional veggies!
