Organic Homemade Vegetable Soup

This is the season for coughing and a runny nose. What can make you more comfortable than a fresh bowl of organic homemade soup?

Hearty organic homemade vegetable soup with a low-sodium vegetable broth, carrots, lima and green beans, celery, and more!


  • 2 tablespoons olive oil

  • 1 cup onion, chopped

  • 1 tablespoon garlic, chopped

  • ½ cup celery, chopped

  • 1 cup carrots, chopped

  • 2 bay leaves

  • 32 oz. vegetable broth organic, low-sodium

  • 2 cups crushed tomatoes

  • 2 cups cut green beans frozen

  • 1 cup lima beans frozen

  • 1 cup small green peas frozen

  • salt and pepper to taste


  1. In a large stockpot on medium-high heat add oil; add chopped onions, celery, and carrots; add bay leaves; cook for about 5 minutes then add garlic, 2 tablespoons olive oil,1 cup onion,½ cup celery,1 cup carrots,2 bay leaves,1 tablespoon garlic

  2. Add vegetable broth and tomatoes; turn heat to medium; cover and allow to simmer for 10 minutes. 32 oz. vegetable broth,2 cups crushed tomatoes

  3. Add in frozen vegetables; allow to cook covered for 25 minutes; 2 cups cut green beans,1 cup lima beans,1 cup small green peas

  4. Prior to serving, remove bay leaves, and add salt/pepper (salt and pepper to taste)
